Its mad simple, you turn a/c on theirs a computer controlled sensor that bumps the idle up to compensate for the extra power needed for the compressor with out killing the motor

But in the vid I am not touching the AC or gas... It is just going between like 500 and 1k with the AC continually on, I'm not touching anything or turning AC on and off

it seems like your freon is low, causing the compressor to kick off and on quickly.

yea what timmy said.
just because you turn on the a/c doesnt mean the compressor is on constantly, it cycles based on the pressures at the various points in the system, with low refrigerant pressure it will cycle more frequently.

Yup I'd say low on freon as well. If you'd said it did it all the time I'd suspect a bad IAC sensor or something of that nature...but if it's only with the AC on have someone throw some gauges on it.
