I've been reading a lot of posts on lowering a car but I think I have a different problem than most. Because of all the weight reductions I did, the car sits up very high. I'm measuring almost 29'' from the floor to the top wheel well.
If I were to lower the car by 1.5'' wouldn't that put my car back to the normal ride height? Would I need to replace the shocks if the ride height went back down to stock height?

Most of the problems come from the undercarriage. What is the distance between the cat and the ground/ the front air dam and such?

get softer spring rates or drag springs that are rated at 275lbs per inch

You could just get an adjustable setup. I have the GC kit pn the front of my car. I run 600# springs on my car, crazy drag racers with your sub-300 spring rates.

I wouldn't put drag springs on it unless that is all you plan of doing with the car. And whatever you do don't just cut the springs you have to drop it. Look into lowering springs or coil over shocks to get her down. It should handle better not to mention look better. When I first got mine the owner before me had air shocks and the rear was way up in the air. After some suspension mods I dropped 2" in the front and 5" in the rear. Huge improvement with corners.
