I have to agree that I have yet to see a single carbon fiber interior done that looks good (especially in an american muscle car). I say just go with the small accents like I did in mine; (silver dash plate, silver door inserts, race pedals, gauge pod, custom shift knob ect.)
Also, you can use lighting to change the appearance drasticly. Here's a Firebird I always thought looked sweet with its custom lights;
