The plenum in the edelbrock is significantly smaller than the stock intake. It was the 'design sacrifice' to make it an 'air gap' design.
That's why the manifold doesn't perform well. The stock LT1 manifold does better when the plenum is enlarged, casting a new manifold with a too-small plenum is just... well... stupid is the word that comes to mind.
