Presuming you've read Guy Fieri's, Diners, Drive-Ins, and Dives. Most of the successful places in that book do things in a unique or personalized way- even if they offer typical diner fare. In an area like Lambertville, you should probably have a menu that appeals to local tastes (locals will be your profit base) as well a secondary menu theme that offers a new twist on the traditional diner standbys. Well prepared food in good sized portions will get the most notice in a new restaurant. Price your menu items realistically (good price to quality ratio). Make sure the food is prepared in a consistent manner and served fresh and hot. Train your kitchen and service staff thoroughly. They're your direct links with the public. Good luck.
