In both, briefly (as in a few sentences or less) recap what you spoke about and why you'd be a good fit. I actually use 7 1/4 x 10 1/2 off white heavy bond paper for the hard copy letter. It forces me to be succinct, and it appears a bit more personal than 8.5x11 white.
