If the shims are new or clean, I usually leave them alone. I would only be concerned with where the pad rides on the caliper mount. I always grease the slides. Make sure the rubber boots are in good shape otherwise moisture and water gets into the caliper mount, rusts the pin and mount up, and you wind up with a seized slide. The way Scott does it would be by the books though and the correct way to do it.
