That's a tough call. Wrapping by a professional will probably be close enough to the paint job that its not worth it. Doing it yourself saves on labor but there will be a learning curve. The body panels need to be in excellent condition as any surface imperfections will show, even the peeling clear. If you are trying to get top dollar, it isn't worth it. I don't think you have enough mods to warrant parting it out. If anything I would return it to stock or as close as you want, selling off what will bring in more cash on its own instead of left installed, and then sell the car with the fresh paint job. Does it need full paint? Or could the clear be sanded and sprayed over the original ( I assume) paint?
