Low Coolant Warning Light

Assistance and advice needed. 95 TA with the LT1 and the low coolant light comes on after about 45 - 60 minutes of driving. Engine temp gauge never moves past the middle (210).....it never even gets hot enough for the electric fans to kick in, even when sitting running in the driveway....it never leaks anything on to the ground when parked.....check both the radiator and overflow container when it is cold and hot, both are full. Any ideas ?
