you can drain it enough so that you can take the top rad hose off the radiator without coolant pouring out, like 3 inches give or take. once you remove the thermostat your going to loose some more coolant anyway since it should be closed and when you remove it, itll basically equal the pressure inside the motor and some excess will pour out. plus some will stay in the upper hose when you remove it, itll be a little messy but not too bad.
